Instructions

  1. Prep chicken
    Pat thighs dry with paper towels.
    Tip: Dry skin = crispy sear!

     

  2. Make sauce
    Whisk soy sauce, mirin, sake, sugar, ginger.

     

  3. Sear chicken
    Cook skin-side down 6 mins. Flip, cook 4 mins.

     

  4. Glaze
    Pour sauce over chicken. Simmer 5 mins, spooning sauce

     

  5. Rest
    Remove from heat. Rest 3 mins before slicing.

     

  6. Serve
    Cut into strips, drizzle sauce, add sesame seeds.
