Ingredients
- 200g rice noodles
- 2 tbsp tamarind paste
- 3 tbsp fish sauce
- 1 tbsp palm sugar
- 100g firm tofu (cubed)
- 2 eggs
- 1 cup bean sprouts
- ¼ cup crushed peanuts
- 2 garlic cloves (minced)
Instructions
- Soak noodles: Submerge in warm water 15 mins. Drain.
- Prep sauce: Mix tamarind + fish sauce + palm sugar.
- Cook tofu Pan-fry until golden. Set aside.
- Stir-fry Sauté garlic. Add noodles + sauce. Toss 2 mins.
- Eggs Push noodles aside. Scramble eggs in pan. Mix.
- Add-ins Fold in tofu + bean sprouts.
- Serve Top with peanuts + lime + chili flakes.
