Glazed Japanese chicken with sticky-sweet soy-based sauce.

Ingredients
- 4 boneless chicken thighs
- ¼ cup soy sauce
- 2 tbsp mirin
- 2 tbsp sake
- 1 tbsp sugar
- 1 tsp grated ginger
Instructions
- Prep chicken Pat thighs dry with paper towels.Tip: Dry skin = crispy sear!
- Make sauce Whisk soy sauce, mirin, sake, sugar, ginger.
- Sear chicken Cook skin-side down 6 mins. Flip, cook 4 mins.
- Glaze Pour sauce over chicken. Simmer 5 mins, spooning sauce.
- Rest Remove from heat. Rest 3 mins before slicing.
- Serve Cut into strips, drizzle sauce, add sesame seeds.
