Traditional Neapolitan pizza with fresh mozzarella, basil, and San Marzano tomatoes.

Ingredients
- 500g Tipo 00 flour
- 325ml warm water
- 7g active dry yeast
- 1 tsp salt
- 200ml San Marzano tomato sauce
- 200g fresh mozzarella
- Fresh basil leaves
- Extra virgin olive oil
Instructions
- Activate yeast Mix yeast with warm water (40°C/105°F). Let sit 5 mins until frothy. Tip: Use a thermometer – water over 43°C kills yeast!
- Make dough Combine flour + salt. Add yeast mixture. Knead 10 mins until smooth. Tip: Pass the "windowpane test" – stretch dough until translucent.
- First rise Oil bowl, cover dough, rest 1 hour until doubled.
- Preheat oven Place pizza stone in oven. Heat to 250°C (480°F) for 30 mins.
- Shape dough Roll into 30cm circle. Spread sauce, leave 1cm border.
- Add toppings Tear mozzarella over sauce. Drizzle olive oil.
- Bake Slide onto stone. Cook 8–10 mins until crust blisters.
- Finish Top with basil. Slice immediately.
